An easy breakfast recipe of baked porridge with honey, spices and pears makes for a slow Sunday morning and gives you more time to cosy up on the couch before you start your day, sounds idyllic doesn’t it? It CAN happen!

What you’ll need:
2 cups rolled oats
Zest of ½ lemon
½ tsp ground cinnamon
¼ tsp ground nutmeg
1 tsp vanilla paste
2 star anise
500ml milk
250ml cream
2 ripe pears, peeled, cored & diced
¼ cup honey, plus extra to serve
100g roasted almonds, roughly chopped, divided
What to do:
In a baking dish, combine the oats, lemon zest, spices, milk, cream and stir to combine. Cover and refrigerate for 2 hours or overnight.
Preheat oven to 160°C.
Remove oats from fridge and stir through pears, honey and half the almonds. Cover tightly with foil and bake for 25-30 minutes until the oats are cooked and milk is absorbed. Remove star anise and serve warm with extra honey and almonds over the top.
